LEMON CUSTARD BARS
 

1 c. soft butter
2 1/2 c. sugar
2 c. flour
4 eggs
1 tsp. baking powder
1 tsp. salt
5 tbsp. lemon juice

Blend butter with 1/2 cup of the sugar and all of the flour. Press in bottom of a 13 x 9 inch pan. Bake for 20 minutes at 350 degrees. Beat eggs, baking powder, salt, remaining sugar and lemon juice. Pour gently over hot crust. Return to oven. Bake 30 minutes longer or until topping is set and puffed. Cool in pan. Cut and store in airtight container. Makes 3 dozen bars.
