1/2 c. butter, room temperature 1 1/4 c. all-purpose flour 1/2 c. quick cooking oatmeal 1/2 c. firmly packed brown sugar 1/4 tsp. salt FILLING: 1 (8 oz.) pkg. cream cheese 1/3 c. sugar 1 egg 2 tsp. grated lemon rind 1 tbsp. lemon juice 1/4 c. milk Combine first 5 ingredients. Using a pastry blender, cut in butter until crumbly. Press half of mixture into bottom of pan, 8 or 9 inch square. Combine remaining ingredients; beat until smooth and creamy. Pour over crust. Top with remaining crumb mixture. Bake for 30 to 35 minutes at 350 degrees. Cool. Cut into bars and store in refrigerator. |
