CRANBERRY RAISIN NUT BARS
 

1 cup golden raisins
1 cup Craisins (dried raisins)
1 cup Macadamia nuts, sunflower seeds, almonds, etc.
1/4 cup honey

In a food processor or food grinder, coarsely chop the raisins, Craisins and nuts.

Remove the blade and stir in the honey (by hand), mixing well. You will need only enough honey to bind the mixture; depending on which ingredients you choose, you may need a little more or less, so adjust accordingly. A few drops of vanilla may optionally be added to the honey, or a 1/3 teaspoon of cinnamon or ginger, for variation (be careful not to overdo).

Turn mixture out onto a 1/2 inch thick cookie sheet lined with parchment or wax paper that has been well buttered. Press out to an even thickness using the back of a large spoon (buttered or sprayed with nonstick spray).

Cover with a second layer of paper and a second, (matching sized) cookie sheet. Place a heavy weight over it for about 24 hours.

Cut into bars and roll in shredded coconut. Wrap in wax paper and store in a cool, dry place.
