5 lbs. self-rising meal (Autry Blue Stripe)
4 c. self-rising flour
1/2 c. sugar
2 1/2 c. dry nonfat milk (9.6 oz. box) Mix well and can be frozen. To coat fish after they have been salted and peppered. Dip oysters, scallops or shrimp in beaten egg with salt and pepper added, then roll in hush puppy mix and fry quickly in hot oil. Hush Puppies: 1 c. hush puppy mix to 1/2 c. + 1 tbsp. water Mix and drop from spoon into hot oil and fry until golden brown. Put cup of water to dip spoon in to keep clean, so hush puppies will come off well. |
