ARTICHOKE FRITATTA
 

4 eggs, beaten
6 soda crackers, crumbled
1/2 lb. sharp cheddar cheese, grated
2 jars marinated artichoke hearts, chopped
1/2 onion, finely chopped
Salt & pepper to taste

Saute onion in oil drained from artichokes. Beat eggs and add other ingredients, one at a time, stirring with fork after each addition. Oil 8 x 8 inch pan and bake mixture in it at 325 degrees for 30 to 40 minutes. Pour off excess oil when taken from oven. Cut into squares when cold. Reheat before serving. Bake 10 to 12 minutes at 325 degrees.
