BAKED STUFFED LITTLE NECKS
 

3 qt. unopened Little Necks = 36 half shells
1 med. red onion
Flavored bread crumbs
Milk
Sherry wine
Bacon

Open Little Necks and clean shells. Grind 1 medium red onion and saute in butter. Grind Little Necks and add to onion. Pick out most black bellies. Add bread crumbs. Mixture should be like paste. Thin to desired consistency using half milk and half sherry wine. Fill shells and place a cube of uncooked bacon on each shell. Bake at 375 degrees for 12 minutes until bacon is crisp.
