1 lb. pork sausage
8 oz. grated cheese (I use half Cheddar & 1/2 Monterey Jack)
1 1/2 c. Bisquick
2 eggs
1 pkg. oven fried, pork flavored Shake `N Bake
About 16 jalapeno peppers (I prefer fresh, but canned can be used)
Cut a lengthwise slit in peppers and remove seeds and membranes (I use a pair of surgical gloves to protect my hands from burning). Use 2 (3 ounce) of the grated cheese and stuff in jalapenos. Mix remaining cheese, sausage and Bisquick; knead until uniform.
Separate into patties and form around stuffed peppers. Make sure ends are closed and only the stem is exposed.
Beat eggs in a bowl; pour Shake `N Bake on a plate. Dip each covered jalapeno into egg mixture a roll in Shake `N Bake. Bake on cookie sheet for 25 minutes at 325 degrees (turn after 15 minutes).
These take awhile to prepare alone - make it a "family affair" and set up an assembly line!!!
