ARTICHOKE BALLS
 

14 oz. can artichoke hearts, drained & mashed
1 c. Progresso seasoned bread crumbs
2 tbsp. olive oil
1 tbsp. lemon juice
2 tbsp. Romano or Parmesan cheese
2 eggs
2 cloves garlic, crushed

Combine all ingredients. Roll in small balls. Roll in extra cheese, using the same kind you put into balls. Heat in 350 degree oven for 10 minutes. Do not let them dry out. They may be frozen. Makes 4 to 6 dozen depending on size of balls.
