2 c. sliced zucchini 1 clove garlic, minced 1 onion, sliced Salt Saute above ingredients in a little butter and put in pie shell crust (recipe follows). 1 c. cream 1 c. milk 1/2 c. shredded Mozzarella Mix together and pour over zucchini mixture. Bake at 375 degrees for 45-60 minutes. Quiche will be done when inserted knife comes out clean. FANTASTIC QUICHE CRUST: 1 c. whole wheat flour 2/3 c. shredded cheese 1/4 c. chopped almonds 1/2 tsp. salt 1/4 tsp. paprika 6 tbsp. corn oil Combine ingredients and press into pie plate. Bake at 400 degrees for 10 minutes. |
