EASY BRUSCHETTA BITES
 

6 Roma tomatoes; diced small
1 large green bell pepper; diced small
1 medium red onion; diced small
4-6 cloves garlic; minced
2 tablespoons extra virgin olive oil
1 loaf French baguette (have your bakery slice it)
1/2-3/4 cup cilantro
10-14 slices provolone cheese
Italian seasoning
1/2 cup-1cup additional olive oil

First, set oven to broil.

Combine diced vegetables, garlic, and cilantro with a little bit of the oils. You may dash a little salt, pepper, and Italian seasoning if you wish.

As oven heats, place sliced bread bites on baking sheets.

Combine Italian seasoning, salt and pepper, into bowl with olive oil and then brush onto bread bites. Flip bites and do the same. Put bread under broiler in the oven and watch closely for light browning of top sides.

Tear Provolone rounds into thirds. As bread begins to brown, remove from the oven and flip each piece using a mini turner.

Top the breads with the vegetable mixture and then with a portion of cheese. Put back under broiler until cheese begins to bubble and slightly brown.
