ITALIAN STYLE ZUCCHINI CASSEROLE
 

2 tbsp. vegetable oil (or olive oil)
1/2 c. chopped onion
1 clove garlic, minced
5 c. chopped zucchini (do not pare)
Grated Parmesan cheese
3 c. stewed tomatoes (with liquid)
3 tbsp. tomato paste
1 tsp. Italian seasoning
Salt and pepper to taste
3 c. cooked ziti or other cooked pasta

In large skillet, heat oil; add onion, garlic and zucchini and saute until onion is lightly brown. Add stewed tomatoes, tomato paste and seasonings; stir t o mix. Simmer 15 to 20 minutes or until zucchini is tender. Combine zucchini mixture with cooked pasta in casserole dish.

Mix well. Sprinkle generously with grated Parmesan cheese. Cover and bake in preheated 350 degree oven for 10 to 15 minutes or until bubbly. Yield: 4 to 6 servings.

NOTE: For a heartier dish, add 3/4 pound browned ground beef to casserole before serving.
