JIFFY CASSEROLE
 

1 lb. lean ground beef
1/4 c. onion
1 can Mexican stewed tomatoes
1 can vegetarian refried beans
Diced green chiles
10 oz. frozen corn
1 pkg. Jiffy corn bread mix
1 1/2 c. Cheddar cheese

Brown ground beef, draining fat. Saute onion until tender. Mix everything together (except Jiffy mix and cheese). Add egg and milk to Jiffy mix as instructions say. Pour into meat mixture and stir.

Pour into 13 x 9 inch greased baking pan. Sprinkle cheese on top. Bake in 400 degree oven for 20 minutes or until sides are "raised" and golden. (Make sure center is done.) (This can also be made in the microwave.)
