CRAWFISH CASSEROLE
 

1 lg. onion, chopped
1 bell pepper, chopped
1/2 stick butter
1 can cream of shrimp soup
1 can cheddar cheese soup
2 lb. crawfish
Salt and pepper to taste
2 to 3 c. cookie rice

Saute onion and bell pepper in butter. Add shrimp and cheddar cheese soups. Cook for 10 minutes. Add crawfish and seasonings at this time. Cook for 10 minutes. Add 2 or 3 cups cooked rice. Put in casserole dish and cover. Bake for 20 minutes at 350 degrees.
