COQ AU VIN CASSEROLE
 

6 oz. "No yolk" thin noodles, cooked
1 c. chicken breast, cooked and cubed
1/2 c. pearl onions
1/2 c. fresh mushrooms, sliced
3/4 c. low fat cottage cheese
1 c. plain low fat yogurt
1 c. dry cooking sherry
1 tsp. Tamari soy sauce
1/4 tsp. garlic powder
1 tbsp. dried onion
Pinch of pepper
Pinch curry powder

1. Preheat oven 350 degrees.

2. Combine cottage cheese, yogurt, sherry, soy sauce, garlic powder, onion, pepper, curry powder in blender until smooth.

3. Toss noodles, mushrooms, onions and chicken gently. Pour sauce over. Toss gently.

4. Pour into Pam sprayed casserole.

5. Bake 30-35 minutes. (Serves 6)
