1 lb. ground beef
1 med. onion, chopped
3 tbsp. rice
1 can tomato soup
3 c. chopped cabbage
Brown ground beef with onion, salt, and pepper to taste in skillet, stirring frequently. Drain. Add rice, soup, and 1 soup can of water. Simmer for 10 minutes. Place cabbage in greased 2 quart casserole. Pour ground beef mixture over cabbage. Bake, covered, at 325 degrees for 1 1/2 hours. Yield: 5 servings.
Note: I sometimes use tomato juice, it gives a better flavor.
