BAKED CHILIES RELLENOS CASSEROLE
 

2 (4 oz.) cans diced green chili
8 oz. no fat or low fat cheese, shredded
2 c. skim milk
1 c. packaged biscuit mix
4 slightly beaten eggs or 1 c. egg substitute
1 c. no fat cottage cheese
Salsa, optional

Spray a 12 x 7 1/2 x 2 inch baking dish with non stick spray coating. Sprinkle with chili peppers and cheese.

In medium bowl, combine milk, biscuit mix and eggs with a wire whisk or fork until smooth. Stir in cottage cheese. Spoon egg mixture over chilies and cheese.

Bake uncovered at 350 degrees for 45 minutes or until puffed and knife inserted near center comes out clean. Top with salsa if desired.
