CANDY KITCHEN PEANUT BRITTLE
 

3 c. sugar
1 1/2 c. white syrup
1 1/3 c. water
2 c. raw peanuts
1 tbsp. butter
1 tsp. baking soda
1 tsp. vanilla

Butter 2 cookie sheets and put a knife under one end of pan. This helps in cooling. Mix vanilla and soda in a small cup and set aside for later use.

Stir sugar, syrup and water in deep pan until it boils. Cook to hard ball stage on a candy thermometer. Add peanuts and butter and stir continuously until mixture reaches hard crack stage on the thermometer. At this point remove from heat and add the soda and vanilla mixture to the boiling candy. Stir quickly an be careful as the mixture will bubble up quickly. This mixing should be quick so that the candy does not set up in the pan.

Pour mixture out onto a buttered cookie sheet. Spread out with a spoon to even thickness. Let cool thoroughly. Then remove from pan and break into pieces.
