ST. PATRICK'S DAY CUPCAKES
 

1 3/4 c. all-purpose flour
1 (4 serving size) instant pistachio pudding mix
3/4 c. miniature chocolate pieces
2/3 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
2 eggs, beaten
1 1/4 c. milk
1/2 c. cooking oil
1 tsp. vanilla

Grease muffin cups or use paper bake cups. In large mixing bowl stir together flour, pudding mix, chocolate pieces, sugar, baking powder and salt. In small bowl combine beaten eggs, milk, oil and vanilla. Stir into flour mixture just until combined. Fill muffin cups 2/3 full. Bake in a 375 degree oven for 18 to 20 minutes or until golden brown. Cool on wire rack. Frost with cream cheese frosting and sprinkle with green sugar and green milk chocolate pieces or use green tinted coconut.
