1 (8 oz.) pkg. cream cheese, softened
1/3 c. sugar
1 egg
1/8 tsp. salt
1 c. semi-sweet chocolate chips or mini chips
3 c. flour
2 c. sugar
2/3 c. cocoa
2 tsp. baking soda
1 tsp. salt
2 c. water
2/3 c. oil
2 tbsp. vinegar
2 tsp. vanilla
To prepare filling, combine cream cheese, sugar, egg and salt in small bowl and beat until smooth and creamy. Stir in chips. Set aside.
To make cupcakes, combine flour, sugar, cocoa, baking soda and salt in large bowl. Add water, oil, vinegar and vanilla; beat on medium speed 2 minutes or until combined. Fill paper lined muffin cups 2/3 full. Spoon 1 level tablespoon cream cheese mixture into center of each cupcake. Bake at 350 degrees for 20 to 25 minutes or until toothpick inserted in cake portion comes out clean. Cool. Makes 27 cupcakes.
