OLD FASHIONED CARROT CAKE
 

1 1/2 c. peanut or vegetable oil
2 c. sugar
4 eggs, lightly beaten
3 c. all-purpose flour
3 tsp. baking powder
2 tsp. baking soda
2 tsp. ground cinnamon
1/2 tsp. salt
2 c. finely grated raw carrots
1 c. finely chopped walnuts

Combine oil, sugar, and eggs in a large bowl. Sift in flour, baking powder and soda, cinnamon and salt. Mix well. Add carrots and nuts; mix well. Turn into a greased 10x4-inch tube pan. Bake in a preheated 350 degree oven for 50 minutes, or until tester inserted into center comes out clean. Remove from stove; let stand 10 minutes. Turn out on a rack to cool. Frost with white icing, if desired, or serve plain.
