COCONUT CHIFFON CAKE
 

2 c. flour
1 1/2 c. sugar
3 tsp. baking powder
1 tsp. salt

Make a well and add in order: 7 egg yolks 3/4 c. cold water 1 tsp. vanilla 1 tsp. almond extract

Beat on medium for 1 minute. 1/2 tsp. cream of tartar

Beat on high 7 minutes. Pour egg yolk mixture gradually over beaten egg whites, gently folding with rubber scraper.

Fold in:

Put in ungreased tube pan immediately. Bake 350 degrees 45 to 50 minutes.

ICING:

2 c. powdered sugar
1/4 c. fat
2 1/2 tbsp. juice, water, or milk
1 tsp. vanilla
