FRIED ONION RING BATTER
 

1 c. sifted plain flour
1 3/4 tsp. salt
1 1/2 tsp. baking soda
1 egg yolk
2/3 c. milk
1 tbsp. salad oil
1 egg white (folded in last)
Onions

Peel and slice onion 1/4 inch thick. Separate and cover with cold water for 30 minutes. Drain rings and dip in batter. Fry in deep shortening or oil at least 1 inch deep.

The temperature of the oil should be about the same as when frying French fries. The batter can also be used for eggplant or green tomatoes.
