LEMON JELLO CAKE
 

1 yellow or lemon cake mix
1 (3 oz.) pkg. lemon Jello
4 eggs
3/4 c. cooking oil
3/4 c. water

Mix all ingredients, including Jello. Beat at medium speed 3 minutes. Pour into a 13"x9" glass cake pan, greased and floured. Bake at 325 degrees for 35 to 45 minutes or until toothpick comes out clean.

While cake is baking, sift 2 cups of powdered sugar into a bowl, add the juice and grated rind of 3 lemons. If no fresh lemons on hand, use ReaLemon juice (approximately 1/3 cup) and add to powdered sugar. When cake is done, take a dinner fork and prick all the way to bottom of hot cake. Pour glaze on top and down sides of cake. Will glaze as it cools.
