AUNTIE BETT'S CHEESECAKE
 

16 oz. cream cheese (soft)
2/3 c. plus 3 tbsp. sugar
3 extra lg. eggs
1 1/2 tsp. vanilla
8 oz. sour cream
1 graham cracker crust

Beat together with cheese: 2/3 cup sugar, eggs, 1/2 teaspoon vanilla until smooth. Pour mixture into prepared crust. Bake in preheated 350 degree oven 25-35 minutes or until puffy and brown around the edges. Cool cheesecake 20 minutes at room temperature (will sink slightly).

Mix sour cream, 3 tablespoons sugar. 1 teaspoon vanilla (the remaining). Spread over cheesecake to about 1/2 inch from the edge. Bake at 350 degrees for 15-20 minutes. Cool in the refrigerator.
