CHEESE CAKE
 

24 oz. Philadelphia cream cheese
1 c. sugar
2 tsp. vanilla

1 (3 oz.) box lemon Jello
1 c. boiling water
3 tsp. lemon juice

1 lg. can chilled Pet milk

1 (13 oz.) box vanilla wafers (crumbled)
1 stick melted butter (mix ingredients and line pie pan)

Put aside 1/4 cup crumbs to sprinkle on top of cake.

Cream together (in mixer) the cream cheese, sugar and vanilla. Add the Jello mixture (cool), a little at a time, and mix well. Beat the chilled Pet milk until it expands and thickens, then fold it into the cream cheese mixture. Pour into pastry shell. Sprinkle vanilla wafer crumbs on top of cake. To make festive looking, garnish with cherries, if desired.
