FRESH GREEN BEANS
 

2 lbs. fresh green beans
2 qts. water
1/2 lb. diced salt pork or ham hock
Salt to taste
1/4 tsp. sugar

Remove strings from beans; cut beans into 1 1/2 inch pieces. Wash thoroughly. Put water in a 4 quart saucepan, and add salt pork. Cover and cook about 5 minutes. Add beans, salt and sugar. Cover and cook over medium heat 25 to 35 minutes or until tender. Yield: 6 to 8 servings.
