Serves 4. 2 acorn squash 2 tsp. lemon juice 1/4 c. seedless raisins 1 1/2 c. applesauce 1/4 c. brown sugar 3 tbsp. chopped walnuts Butter Preheat oven to 400 degrees. Scrub and halve acorn squash, then remove seeds. Place, cut side up, in a baking dish. Mix together the lemon juice, raisins, applesauce, brown sugar and chopped walnuts. Spoon mixture into the cavities of the squash and dot with butter. Pour 1/2 inch of hot water into the bottom of the baking dish, cover and bake for 30 minutes. Remove cover and bake for 30 minutes more. |
