16 oz. can sliced beets, drained 1 tbsp. cornstarch 1/4 to 1/2 tsp. pumpkin pie spice 1/3 c. cold water 1/4 to 1/3 c. strawberry jam 2 tbsp. lemon juice 2 tbsp. butter In saucepan, combine cornstarch and pumpkin pie spice. Stir in cold water, jam, and lemon juice. Cook, stirring over medium heat, until mixture is thick and bubbly. Stir in beets and butter. Cook until all is heated through. 4 servings. Great taste; can be doubled. Kids even love this dish! |
