1 c. dried black beans, rinsed & washed

Cook as other dried beans until tender in 3 to 4 cups water for 2 1/2 to 3 hours. Or use 1 (12 oz.) can black beans (Progresso brand). Add sauteed green chopped pepper and chopped onion.

1 tbsp. olive oil
2 tbsp. wine vinegar
3 tbsp. sugar
1/2 tsp. garlic powder
Salt & pepper
1/4 tsp. oregano

Simmer for 30 to 40 minutes. Serve over cooked rice. (Distinctive sweet-sour taste of Old Castle Spain) from Grandmother Masso in Barcelona.
