2 tbsp. olive oil 1 c. chopped onion (1 med. onion) 1 clove garlic, crushed 1/3 c. long grain rice 2 1/4 c. water 3/4 c. lentils Salt & pepper to taste Film heavy saucepan with oil; add onions and cook over medium heat, stirring often, until onions are softened, about 3 minutes. Add garlic and rice, stirring to coat rice with oil; cook and stir 1 to 2 minutes or until rice is opaque. Add water, lentils, salt and pepper. Bring to a simmer and cook, covered, over low heat for 20 to 30 minutes or until lentils and rice are tender and water is absorbed. Finished dish should not be soupy. |
