ITALIAN SPINACH RICOTTA PIE
 

9 inch cooked pie shell
1 tbsp. butter
1 c. minced onion
1 (10 oz.) frozen chopped spinach
1 (15 oz.) Ricotta cheese
2 eggs
3/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. ground nutmeg
3/8 c. Parmesan cheese

Preheat oven to 350 degrees. Drain spinach using hands, melt butter. Fry onion until soft; add spinach and stir until most of moisture is gone. Remove from heat. In large bowl add all other ingredients to spinach and stir until mixture looks like green and white marble. Pour in pie shell. Bake until golden brown.
