6 c. sliced, cooked and peeled potatoes (warm) 4 strips bacon, cooked and crumbled 1/4 c. bacon drippings 1/2 c. minced green or sweet onion 2 tbsp. flour 1 tsp. salt Pepper to taste 1/4 c. sugar 1/2 c. water 1/2 c. white vinegar In bacon drippings cook onions until transparent. Mix flour, water, salt, vinegar and sugar. Add to skillet with onions. Cook until thickened. Pour over potatoes and fold in gently. Salt and pepper. Allow to stand for potatoes to absorb dressing. |
