BROILED EGGPLANT
 

2 sm. firm eggplants
Butter
Parsley
Salt and pepper

Peel and slice in pieces 1/2 inch thick. Butter both sides generously. Place on a flat broiler pan. Sprinkle with salt and pepper. Place under preheated moderate broiler. Broil until lightly browned on both sides. Transfer to platter and sprinkle with parsley.
