BROCCOLI-MUSHROOM QUICHE
 

2 unbaked pie crusts
6 eggs or egg substitute
1 pt. half and half
10 oz. pkg. thawed chopped broccoli
4 oz. can chopped mushrooms, drained
1/2 med. onion, chopped
1 3/4 c. shredded lowfat Cheddar cheese
1/2 c. Swiss cheese
3/4 tsp. Morton Natures Seasoning Blend
1/4 tsp. Lawry seasoned salt
4 tbsp. Betty Crocker Bacos

Coat skillet with cooking spray. Saute onion, broccoli and mushrooms. In large bowl, beat eggs with half and half. Add vegetables to egg mixture. Add seasonings, cheeses and Bacos, stirring well.

Divide mixture evenly into two unbaked pie crusts. Bake at 425 degrees for 10 minutes. Lower heat to 350 degrees and bake for 30 to 40 minutes or until set and browned. Makes two 9 inch pans.
