POTATO-CHEESE SOUFFLE
 

Serve with a fresh green salad and a spicy vinegrette dressing. A hot baked loaf of crusty french bread would also be nice.

2 c. mashed potatoes
2 eggs, slightly beaten
4 oz. cheddar cheese, shredded
1/4 tsp. pepper
1/4 tsp. garlic powder
Paprika

Mashed potatoes should have a soft consistency. If too thick add a little milk. Beat in eggs. Add cheese, and beat into the potato mixture. Add pepper and garlic and beat. Sprinkle with paprika, and bake at 375 degrees for 25 to 30 minutes, until golden, puffed, and set. Serve at once. Serves 4.
