2 c. cold sliced potatoes 1/2 tsp. salt 1/8 tsp. pepper 1/4 tsp. celery salt 2 tbsp. butter 1 egg yolk, beaten 1 tsp. chopped parsley Few drops onion juice Bread crumbs 1 egg, well beaten Combine first 8 ingredients, beat until fluffy. Shape into cylinders. Dip in bread crumbs, in egg and again in bread crumbs. Fry in hot deep fat (380 degrees) until brown. Drain. Makes 6-8 croquettes. |
