FRENCH FRY BAKE
 

3/4 c. chopped onion, celery, peppers
1/3 c. butter
1/3 c. all-purpose flour
1/2 tsp. salt and pepper
3 c. milk
3/4 c. shredded American cheese (3 oz.)
3/4 c. shredded carrots
1 (32 oz.) frozen French fries

In saucepan - cook the onion, celery and pepper until tender, not browned. Stir in butter, flour, salt and pepper. Add milk all at once. Cook and stir until bubbly. Cook and stir 1 minute more. Add 1/2 cheese, carrots, stirring until cheese is melted. In 9 x 13 inch pan combine potatoes with cheese sauce. Bake 30 minutes at 375 degrees. Sprinkle remaining cheese on top and bake 5 minutes more. May garnish with green peppers. Serves 12.
