2 (for each person) parsnips 1 tbsp. butter Sprinkle of nutmeg
Peel, cut parsnips into 2 (3 x 1/2 inch) strips. Do not core. Microwave with butter 3 minutes on high or cover with boiling water, cooking until tender. Put into ricer. Spoon into bowl, adding butter. Sprinkle with nutmeg.
