SPANISH RICE AU GRATIN
 

1/2 c. uncooked rice
1 c. water
1/2 c. chopped onions
1/3 c. chopped green peppers
1/2 c. chopped celery
1 1/2 tbsp. butter
1 c. tomatoes (stewed or canned)
1/2 tsp. salt
1/2 tsp. monosodium glutamate
1 tsp. sugar
1 tsp. chili powder
1/2 tsp. Worcestershire sauce
1 c. grated cheddar cheese

Combine rice, water, and salt. Bring to a boil. Stir; cover and reduce heat. Simmer for 14 minutes. Meanwhile, cook onions, green pepper, and celery in butter. Add tomatoes, salt, monosodium glutamate, sugar, chili powder, and Worcestershire sauce. Add cooked rice and simmer until thick. Pour into a buttered casserole and top with cheese. Place under broiler and melt. Serves 6.
