"FRENCH FRIED" EGG PLANT
 

1 egg plant
1 egg
1/2 c. milk
Flour
Salt to taste
Pepper

Cut egg plant into small (3/4 inch) cubes. (Do not peel.) Beat egg and milk; pour over egg plant. Lift egg plant cubes out of liquid and dredge in flour. Drop into hot deep oil and fry until golden brown.

You may add salt and pepper (if desired) to flour.
