BURDOCKS
 

4 c. burdock stems, cut in 1 inch pieces
3 eggs, slightly beaten
1 c. milk
1/2 c. flour
1 tsp. salt
Oil for pan

Rub fuzz off burdock stems under faucet, slice and cook in boiling water until tender. Drain and rinse.

In a bowl combine eggs, milk, flour and salt. Beat well. Combine with the drained burdock and fry in a generous amount of oil in frying pan. Brown on each side and serve hot with butter.
