2 tbsp. salad oil
1 lb. fresh broccoli, cut in florets
1 tsp. sugar
1/2 tsp. salt
1/2 (1 lb.) fresh mushrooms, cut in 1/4 inch slices
1/4 c. finely chopped onion
1/4 tsp. ground nutmeg dry roasted cashews
Heat 1 tablespoon oil in wok or large frypan. Add broccoli, sugar and salt. Stir fry 3 minutes or until broccoli is tender, crisp. Add remaining oil, mushrooms, onions and nutmeg. Stirfry until added vegetables are tender and crisp (about 1 or 2 minutes).
Sprinkle on cashews, serve hot (6 servings). Looks beautiful! Low in salt, sugar and fat.
