1 tbsp. flour
3/4 c. cold water
1/4 c. cider vinegar
2 tbsp. sugar
1/4 tsp. white pepper
2 to 3 tsp. salt
6 hot med. boiled potatoes, peeled, sliced
1/2 c. chopped onion
1/4 c. chopped green pepper
1/4 c. chopped red pepper
1 c. chopped celery
1/4 c. chopped fresh parsley
4 slices bacon, cooked crisp & minced
1/2 c. bacon drippings
Makes 6 servings. About 1/2 hour preparation time.
Microwave onion, peppers, and celery until soft. Heat bacon drippings in frying pan. Add flour and whisk until thick. Add water, vinegar, sugar, pepper, salt and heat to boiling. Add potatoes, peppers, onions, celery, bacon and parsley to mixture and heat through. Serve immediately while still hot.
