FRIED OKRA
 

1 1/2 lbs. fresh okra
1 egg, beaten
2 tbsp. water
1 c. cornmeal
Salt and pepper to taste
Oil for pan frying

Wash okra, trim off tops and cut into 1/2 inch slices. Mix the egg with 2 tablespoons water and toss with okra. Add cornmeal, salt and pepper. Mix well so all the pieces are coated. Pan fry in a bit of oil over medium heat. This dish must be cooked slowly and carefully so the okra dries out a bit in the cooking. Serves 6.
