BAKED SQUASH RINGS
 

2 acorn squash
1/4 tsp. ground pepper
Salt
1 tbsp. brown sugar
1 tbsp. butter
1 oz. orange juice

Trim off ends of squash. Cut each squash crosswise into 4 rings; discard seeds and membranes from slices. Arrange slices on a non-stick pan and sprinkle with pepper, cover with foil and bake at 350 degrees until slightly tender, about 35- 40 minutes.

In the meantime, combine sugar, butter, and orange juice in a small pan. Cook over medium heat until bubbly. Spoon equal amount of the mixture over each baked ring. Return to oven for 15 minutes, basting 2-3 times with pan juices. Makes 4 servings.
