FRIED RICE
 

2 eggs
3 tbsp. peanut oil
1 clove garlic (1/8 tsp. minced)
1/4 lb. shrimp (sm. bag frozen precooked)
2 c. cold cooked rice (can use Minute Rice)
1 tbsp. light soy sauce
Salt and pepper to taste
1 scallion

Beat eggs. Run shrimp under cold water to defrost. Chop scallion real thin. Scramble eggs in 1 tablespoon peanut oil. Set aside. Put 2 tablespoons peanut oil in hot pan. Fry garlic until golden brown. Add shrimp and cook 1 minute. Add eggs and stir well. Add remaining ingredients and mix well until rice is heated.
