3 dozen fresh corn ears 1 lb. butter 1 pt. half & half Husk, silk, and wash the corn; cut from cob (electric knife works fine). Cut from cob and put in large roaster. Add the butter and half & half. Put in oven at 325 degrees for 1 hour, stirring occasionally. Remove from oven; cool by placing roaster in sink with cold water under it. When slightly cooled, package and freeze as quickly as possible. Makes 16-18 cups. |
