1 c. leftover mashed potatoes 1 egg 1/2 c. flour 1/4 tsp. baking powder 1/4 c. chopped green onions with tops on or more to taste Salt & pepper to taste Vegetable oil for frying Mix all. Drop by spoonsful into hot oil in heavy skillet. Fry 3-4 minutes each side until crisp and golden. Drain between paper towels. Serve hot. |
