5 baked potatoes 1 lg. container low-fat cottage cheese 2 (15 oz.) cans Ranch style beans Chopped onions, if desired 8-10 oz. grated Mozzarella cheese Cut potatoes in half and push from both ends to make it flaky. Salt and pepper. Place 2 tablespoons cottage cheese on each half. Pour 1/4 cup heated Ranch style beans over cottage cheese. Next, sprinkle onions over the beans and last sprinkle 1/2 oz. Mozzarella over the potatoes. Bake in the oven at 400 degrees until cheese melts. |
