1/3 c. firmly packed brown sugar 4 tsp. cornstarch 1/4 tsp. cinnamon Dash salt 1 c. dry white wine (or another 1 c. OJ) 1/2 c. orange juice 1 tbsp. butter 1 c. dried apricots 1/4 c. seedless raisins 6 med. yams, cooked, peeled, and quartered or 3 1 lb. cans drained yams. Mix together sugar, cornstarch, cinnamon, and salt in saucepan. Gradually add wine and orange juice; cook stirring constantly until sauce boils 1/2 minute. Add butter, apricots, and raisins; stir and heat until butter melts. Pour over yams in heat proof serving dish. Bake at 350 degrees for 10 minutes or until heated through. |
